Baita Friuli
Baita Friuli is an unpasteurized semi-hard cow's milk cheese from the Friuli-Venezia Giulia region of Italy.
The cheese has a natural, brown rind with a pale-yellow interior. Baita Friuli has a rich, fruity flavor that is less strong than similar cheeses. The flavor reminds some of Swiss Gruyère, and reminds others of an aged Cheddar.
At 22 pounds (or 10 kilos) The wheels are smaller than Gruyère, and so they mature quicker. Baita Friuli is aged at least four months, but sometimes can be aged about a year.
