Pecorino Sardo
Pecorino Sardo is a firm sheep's milk cheese from Sardinia. Pecorino Sardo is richer and less biting and salty than it's more famous cousin, Pecorino Romano. It is also sometimes called Fiore Sardo.
Pecorino Sardo is an uncooked, hard cheese. Often it is lightly smoked. There are two main varieties: Pecorino Sardo Dolce and Pecorino Sardo Maturo. Left to mature too long, Pecorino Sardo becomes the Sardinian specialy Casu Marzu. Pecorino Sardo should not be confused with another cheese called Sardo; Pecorino Sardo is made from sheeps milk in Sardinia, Italy, and Sardo is made from cow's milk in Argentina.
The Dolce variety is young and soft. It is matured for about 20 to 60 days. It is sweeter than the older version. It is labeled with a green emblem on its packaging to distinguish it from the Maturo version.
The Maturo variety is aged for about 4 to 12 months. It is tangy and a little crumbly. Pecorino Sardo Maturo is labeled with a blue label.
