Morski
Morski is a mild, semi-soft cheese made of pasteurized cow milk in Poland.
Morski is pale yellow in color. It is used in salads, sandwiches, and as a table cheese. It can also be used in cooking as it melts well.
Morski has been described as "bland, boring, and rubbery." Apparently, however, there are still people who like it, as it generally has received positive reviews on igourmet.com.

Is there a similar tasting cheese to morski you could use to substitute?

I'd say Emmental isn't far off. It's nuttier, but a similar softness and the flavour is subtle but distinctive
