Cotswold
Cotswold is a cheese from England made from Double Gloucester with chives and onions added to it. It is a semi-firm cheese, often colored with annatto. It has a hard, grey rind, but most Cotswold sold in stores is sold with the rind already cut off of the cheese. Cotswold may be pasteurized or unpasteurized.
In England, Cotswold is sometimes also called Pub Cheese.
Cotswold has a full, rich, creamy taste. The chives and onions added to the cheese make this an interesting tasting cheese.
