Cebreiro
Cebreiro is a cow's milk cheese from the Province of Lugo in Galicia, Spain. It has a unique shape that looks like a mushroom or a chef's hat. It has a creamy, slightly acidic taste. It has a slightly dry, granular texture.
Cebreiro comes in a fresh variety that has been aged for 48 hours, and a matured variety that has been aged for about 2 months. Some varieties contain a little goats milk.
